Abstract
Eksperimentas atliktas 2019 m. Vytauto Didžiojo universiteto Žemės ūkio akademijos laboratorijoje. Tiriamos erškėtuogės auga sertifikuotame ekologiniame ūkyje, 2 ha plote Pašvitinio k., Pakruojo raj. Erškėčių krūmai pasodinti 2013 m. Erškėtuogės tyrimui buvo renkamos nuo liepos mėnesio iki pirmų šalnų, vaisiai buvo skinami skirtingo sunokimo laipsnio, įvertinant juos vizualiai. Surinkti vaisiai buvo užšaldomi ir džiovinami sublimacinio džiovinimo kameroje, prieš tai pašalinami taurėlapiai, vaisiai perpjaunami per pusę ir atskiriamos sėklos nuo apyvaisio. Eksperimentas bus atliekamas dviem pakartojimais. Iš kiekvieno eksperimento laukelio skinama po 5 kg vaisių. Kiekvieno varianto laboratoriniam mėginiui sudaryti imama po 200g, vaisių sėklų, sėklos liofilizuojamos ir sumalamos. Visi biocheminiai tyrimai atliekami dviem pakartojimais: Sausųjų medžiagų kiekis, ląstelienos kiekis, baltymų kiekis, pelenų kiekis, riebalų kiekis, riebalų rūgščių kiekis, spalvos rodikliai – L* a* b* (šviesumo, raudonumo ir geltonumo koordinates pagal CIE L*a*b* skalę) nustatyti spektrofotometru „ColorFlex“, naudojant Hunter LabTM programinę įrangą.
Tyrimo rezultatai. Laboratorinio eksperimento metu nustatyta, kad esmingai didžiausias sausųjų medžiagų kiekis 97,01 % nustatytas Rosa rugosa 'Rubra' veislės sėklose, joms esant trečiame sunokimo laipsnyje. Esmingai didžiausias ląstelienos kiekis nustatytas I, II vaisių sunokimo laipsnyje Rosa canina genotipo erškėčių sėklose. Rosa rugosa genotipo vaisių sėklose ženkliai didesnis baltymų kiekis buvo III sunokimo laipsnyje -23,63%. Riebalų daugiausia sukaupė Rosa rugosa 'Rubra' ir Rosa rugosa IV sunokimo laipsnyje atitinkamai 16,03 ir 15,89 %. Sočiųjų ir mononesočiųjų riebalų rūgščių ženkliai daugiau sukaupė Rosa canina sėklos, kai buvo surinktos V ir III sunokimo laipsnyje. Polinesočios riebalų rūgštys buvo dominuojančios ir jų daugiausia buvo Rosa rugosa 'Alba' sėklose – 79,55 % nuo bendro riebalų rūgščių kiekio surinkus V sunokimo laipsnyje. L* ir b* spalvos intensyvumas sėklose mažėjo, o didėjant vaisių sunokimo laipsniui. Proporcingai didėjo a* spalvos kiekio rodiklis kartu su sunokimo laipsniu, visose genotipose.

The experiment was performed in the laboratory of the Academy of Agriculture of Vytautas Magnus University in 2019. The studied rose hips grow in a certified organic farm, in a 2 hectare area in Pašvitinis village, Pakruojis Region. Rose bushes were planted in 2013. Rose hips for the study were harvested from July until the first frosts, the berries of different stage of ripeness were picked, assessing them visually. After the removal of sepals, the fruits were cut in half, and the seeds were separated from the pericarp, then harvested fruits were frozen and dried in a sublimation drying chamber. The experiment will be carried out with two repetitions. 5kg of berries will be picked from each square of the experiment. 200g of berry seeds were taken to form a laboratory sample of each version, the seeds lyophilized and ground. All biochemical tests are performed with two repetitions: Dry matter content, fiber content, protein content, ash content, fat content, fatty acid content, color characteristics - L*a*b* (brightness, redness, and yellowness coordinates according to the CIE L*a*b* scale) determined with a ColorFlex spectrophotometer and using the Hunter LabTM software.
Research results. During the laboratory experiment, it was found that the significantly highest dry matter content of 97.01% was found in the seeds of the Rosa rugosa ‘Rubra’ cultivar when they are in the third stage of ripeness. The significantly highest fiber content was found in berry seeds of Rosa canina cultivar during I and II stages of fruit ripening. The berry seeds of Rosa rugosa had a significantly higher protein content during III stage of ripening - 23.63%. The most fat was accumulated by Rosa rugosa ‘Rubra’ and Rosa rugosa during IV stage of ripening 16.03% and 15.89%, respectively. Significantly more saturated and monounsaturated fatty acids were accumulated in Rosa canina seeds that were harvested during V and III stages of ripening. Polyunsaturated fatty acids were predominant and their highest content was in the seeds of Rosa rugosa ‘Alba’, amounting to 79.55% of the total fatty acids, when picking was done during the V stage of ripening. L* and b* color intensity in the seeds decreased as the stage of fruit ripening increased. The index of a* color content increased in proportion with the degree of ripening in all cultivars.
