Vegetable food provides not only high energy, useful fats and proteins, but also biologically active nutrients – vitamins, minerals, enzymes and antioxidants. Nuts included in the daily diet are enriched with antioxidants by our body, not only to slow down the aging process, but also to prevent or reduce the risk of chronic diseases, to maintain cell integrity and function. Vitamin E, which is rich in nuts, can reduce the likelihood of developing vascular disease. Nuts are increasingly included in the diet of daily food, not only because of their special taste characteristics, but also because of their positive health benefits. They are rich in the monounsaturated oils and the great source of useful fats. There are a lot food products from nuts. One of them is milk. One of the most popular nuts milk – almonds, cashews, hazelnuts, coconut, etc. Nut milk is commonly used as an alternative to animal milk because of its taste and nutritional qualities and it often chosen by people who are allergic to normal milk and its products. Society is increasingly interested in a healthy diet and its impact on health. Almost all magazines contain information on the principles of healthy eating. A healthy diet helps to protect and strengthen health and prevent many diseases. A healthy and full-fledged diet affects the physical and mental development of the human being, its ability to work and its longevity. The aim of the study is to investigate the quality of cashews, almonds and hazelnuts and the milk produced from them, as well as to summarize the opinion of Lithuanian consumers on vegetable milk and their consumption.
