Abstract: This work is based on the observation how carbohydrate chantes during sprouting in different seeds varieties. Dry matter, sugars and dietary fiber were detected in dry and sprouted for 1 ,3, 5 days seeds. It was established that the biggest dry matter losies were an amaranths and red clover seeds. Reducing and total sugars increased with every sprouting day, but it was not detected chantes in dietary fibres
