Abstract: The aim of the present study was to determine concentration of nitrate in Lithuanian and other leafy vegetables sold in the Lithuanian trade by ion chromatography method. Leafy vegetables samples were collected from different supermarkets and suppliers. For the analysis were taken samples of these vegetables: fresh spinach (Spinacia oleracea), conservated spinach, fresh lettuce (Lactuca sativa L.), cabbage lettuce (Lactuca sativa var. capitata), rucola (Eruca sativa, Dipotaxsis sp.), chinese cabbage (Brasicca rapa ssp. pekinensis). For nitrate concentration evaluation ion chromatograph Dionex ICS-1100 (USA) was used. The results showed that in all vegetables the content of nitrate differed considerably, independently from where and from what supplier leafy vegetables were bought. Concentration of nitrate did not exceeded maximum permitted level. The highest concentration of nitrate was found in rucola (1375,75 mg ∙ kg-1, SE=63,41) and lettuce (1270,54 mg ∙ kg-1, SE=40,71). The lowest concentration of nitrate was in Lithuanian spinach (143,78 mg ∙ kg-1, SE=14,61)
