Abstract
Bičių produktai yra pripažinti visame pasaulyje dėl jų teigiamo poveikio žmonių sveikatai. Jie turi antiseptinių, priešuždegiminių, antioksidacinių, antibakterinių, antigrybinių ir imunomoduliacinių savybių. O taip pat labai svarbu ir tai, kad bičių produktuose gausu bakterijų, gaminančių bakteriocinus, kurie gali būti panaudojami maisto pramonėje. Šio darbo tikslas – išskirti iš bičių produktų mikroorganizmus ir patikrinti, ar šių mikroorganizmų metabolitai slopina kitų bakterijų augimą. Tyrimų su iš Lietuvoje surinktų bičių produktų izoliuotais bakteriocinais mūsų duomenimis nėra atlikta, todėl bičių produkai buvo pasirinkti kaip tyrimo objektas.
Iš bičių duonelės, žiedadulkių ir propolio izoliuota po tris kolonijas iš kiekvieno produkto ir tirtos jų antimikrobinės savybės difuzijos į agarą diskelių ir difuzijos į agarą šulinėlių metodu. Tyrimo metu antibakterinis jautrumas prieš testuojamas gram-teigiamas bakterijas (Bacillus megaterium, Bacillus mojavensis) ir gram-neigiamą bakteriją (Azotobacter vinelandii) nebuvo nustatytas nei vienu būdu, tad tirti bičių produktai neturėjo antibakterinių savybių šioms kolonijoms.
Literatūroje rasti duomenys rodo, kad iš pieno rūgšties bakterijų išskirti bakteriocinai yra jautrūs pH, todėl bakteriocinų aktyvumas gali sumažėti ar padidėti, priklausomai nuo pH dydžio. Didesniame pH bakteriocinai visiškai arba dalinai praranda savo inhibicinį aktyvumą prieš bakterijas. Bakteriocinai taip pat reaguoja į temperatūros pokyčius. Kai kurie bakteriocinai išlaiko aktyvumą juos paveikus net 115 °C temperatūra, tačiau dalis jų tokio temperatūros šoko neatlaiko ir praranda savo funkciją. Paveikus bakteriocinus fermentu, dalyvaujančiu baltymo skaidymo, jie visiškai netenka savo funkcijos, nes yra peptidinės kilmės.

Bee products are recognized worldwide for their positive effects on human health. They have antiseptic, anti-inflammatory, antioxidant, antibacterial, antifungal, and immunomodulatory properties. It is also very important that bee products are rich in bacteriocin producing bacteria that can be used in the food industry. The aim of this study was to isolate microorganisms from bee products and to test whether metabolites of these microorganisms inhibit the growth of other bacteria. According to our data, no studies have been performed with isolated bacteriocins from bee products collected in Lithuania, therefore bee products were selected as the object of research.
There were isolated three colonies from each bee product (bee bread, pollen and propolis) and their antimicrobial properties were tested by the method of agar disk diffusion and agar well diffusion methods. In the study, antibacterial susceptibility to the tested gram-positive bacteria (Bacillus megaterium, Bacillus mojavensis) and gram-negative bacterium (Azotobacter vinelandii) was not detected in any of methods, therefore, the bee products tested did not have antibacterial properties for these colonies.
Data found in the literature have shown that bacteriocins isolated from lactic acid bacteria are pH sensitive, so bacteriocin activity may decrease or increase depending on the pH. At higher pH, bacteriocins completely or partially lose their inhibitory activity against bacteria. Bacteriocins also respond to changes in temperature. Some bacteriocins retain their activity when exposed to temperatures as high as 115 °C, but some of them do not withstand such temperature shocks and lose their function. When bacteriocins are exposed to an enzyme involved in the breakdown of a protein, they completely lose their function because they have peptide origin.
